I'm interested in running Linux. What flavor should the average user try?

I would suggest Fedora as a first experience. It's easy enough that the average user can stumble through the process. The advanced computer user will also find Fedora to be powerful/flexible enough to be very useful.

What do you run on your servers?

I run Whitebox primarily, the occassional SuSe and, I admit, my home domain runs Windows 2003 Server.
